Gourmet Pizza with Pistachio Pesto, Spanish Ham & Figs

This is a decadent gourmet twist on our fantastic Dough it Yourself pizzas, which are hugely popular in all our shops. We combine our lovely thin and crispy fresh pizza bases with Pistachip Pesto, Mozzarella cheese, Spanish ham and rich figs. Prep Time: 10 minutes
Cook Time: 5-6 minutes
Total Time: 25 minutes
Servings: Makes 2 pizzas
INGREDIENTS - Ingredients in bold are available in store!
1 pack of Dough it Yourself Pizza bases (2 bases per pack)
1 jar of Villa Reale Pistachio Pesto
1 pack of Buffalo Mozzarella
1 pack of Teruel Spanish Ham
Pickled or fresh Figs (sliced)
PREPARATION
Pre-heat the oven to 220 (the hotter the better!). Spread the pizza bases with 2-3 tablespoons of pistachio pesto. Top the pizzas with the Spanish ham and figs (the figs can be put on whole or cut into smaller pieces). Dice the Mozzarella into small pieces and scatter evenly over the pizza bases. Place the pizzas directly onto the middle or top shelf of the oven and cook for 5-6 minutes or until the base is crisp and the pizza has begun to brown. If cooking the two pizzas one above the other then swap over half way through cooking and cook for 1-2 minutes longer. When cooked, remove the pizzas from the oven, slice and serve immediately. WINE PAIRING
The variety of flavours on show here would work equally well with a red or a white wine. For the white we recommend our Torre del Falsco Gargagena (£8.95). This Italian wine will go with the flavours of the taleggio and the ham whilst having enough fruit character to work with the sweetness of the figs. For the red we would recommend one of our favourites, the Soraighe Valpolicella Ripasso (£17.95). This smoothly seductive red has gorgeous aromas and flavours of cherry, raspberry and cranberry and is the perfect match for pizza.
